Rachael Ray’s Meatloaf Muffins Recipe with Cheesy Smashed Potatoes and Green Beans.

You know what’s mind-blowing?
Using the potatoes as “frosting,” the chives as “sprinkles” and making this dinner recipe into cupcakes, then shoveling the whole thing in your mouth. (Pictured: A mini cupcake version. We called them “meatloaf poppers.”)
